Post production is all the processing that takes place after all the raw video ('the rushes') for a project has been shot to produce the final video.
It may simply be selecting the scenes, assembling them in the right order and leaving out everything which doesn't add to the final programme ('editing'). This is usually an essential process for every video.
The editing may involve processing the audio and/or video signal to correct errors or add special effects - particularly as a 'transition' between scenes.
Most post production includes adding titles (certainly at the front, probably at the end, also - maybe at places during the programme). Titles will include simply words or, more complexly, adding a mixture of graphics - either photographs or visual material.
Then there's the sound (most inexperienced people forget how important sound is to the final programme). This may be a 'music bed' and / or a 'voice-over' which helps to explain what the viewer can see, or may be a narrative.
